Small Block & Big Block Chevy Specific - Stall converter - 85 C10 truck = bad idea?

I have a LWB single cab 1985 C10 truck that I've decided to put a fairly mild 355 into. The truck is used for pulling a trailer, hauling whatever and is sometimes daily driven. My question is the cam I have says a stall converter would be recommended but not necessary however I don't want the truck bucking like my camaro at a redlight. Is it safe to run about a 2500 RPM stall on a heavy ass truck like mine that is used for pulling a car trailer? And would it burn up the transmission? It has a brand new TH-350 in it now. I want to be able to run the A/C at a stop, a little bucking isn't bad but this cam is supposed to have a fairly rough idle. Specs are:

A nice little stall will help with the trucks ability to pull and take the camshaft, just make sure you have a nice external trans cooler, and i would not go much more then 2500. TCI makes a saturday night special stall that would probably be right up your alley, it is like a 2000-2200, i have used it and it works great.
