New LS1 Owners - Newbie Tech - Sluggish

First I'd like to say hello to everyone. :wavey:
Next on to my problem.
I recently installed Jet Hot LT's,Hooker ORYP,o2 sims,Borla cat back,and new NGK TR55 plugs in my 99 Trans Am.Since it seems to be sluggish at lower RPM's.I then installed a TSP air lid,Holley powershot,160 t-stat and HPP3 hoping it would pick up a little throttle response.No go.It seems to me like it dumps to much fuel and bogs it until the rpm's move up.
Could it be the exhaust flowing to good?Or maybe the plugs?I'm at a loss here or am just overthinking this so I ask hoping someone else may have experienced this.

You should try have it dyno tuned with a broadband O2 hooked up and see if it's running rich. The HPP3 is a waste and is probably hurting you.

I have thought about dynotuning,just need to find a quality shop in my area that can do it.
I think I'll try taking it back to stock and then just setting the fans to come on with the 160 t-stat and see how it does.
