Im in the process of building a 350sbc and im buying a rebuild kit for it. I have the option of dished or flat top pistons. which should i go with?

depends on heads selection and what you want to do with the engine.
I've run flat tops because with a 64-67 cc heads they'll return 9.5-10:1 compression ratio in a 350, and with aluminum heads it will work fine on pump gas naturally aspirated. If you are planning a forced induction route dished may be the piston to use.

Flat top pistons burn more fuel efficient. I would opt for them, especially if you can get some forged ones.
