From the cam in my sig, how much more power could I expect from changing to one of the following cams?
1) Crane PowerMax Hydraulic Roller .632 lift 244/256 114 lsa
2) Edelbrock Performer Hydraulic Roller .625 lift(intake) .639 lift(exhaust)
236/246 112 lsa
3) Lunati Voodoo Hydraulic Roller .625 lift 241/249 110 lsa

Those cams seem a tad small for a 540 if you ask me but you might just want something mild. On power gaines with everything being ported out I would say quite a bit. No real way to guess on power, depends on a lot of factors.
I am not a fan of off the shelf cams either. Custom grind all the way.
I was about to build a 408 LS1 and its custom cam was larger then that Crane to give you an idea. It was a street strip cam with a little more strip in mind.
